Ingredients

  • 1 cup Ceres Passion Fruit Juice, for the syrup
  • 1/3 cup granulated sugar, for the syrup
  • 2 sprigs fresh rosemary, for the syrup
  • 2 sheets puff pastry, thawed but still cold
  • 4 oz goat cheese, softened
  • 1 tbsp finely chopped fresh rosemary
  • 1/3 cup chopped walnuts
  • 1 large egg
  • 1 tbsp water

Instructions

  1. Make the syrup: add the Ceres Passion Fruit Juice, sugar and rosemary sprigs to a small saucepan. Bring to a gentle simmer, stirring until the sugar dissolves, then simmer for 10 to 12 minutes until slightly reduced and syrupy. Remove the rosemary and let the syrup cool.
  2. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  3. Lay one puff pastry sheet flat and spread the goat cheese evenly over the top.
  4. Sprinkle with the chopped rosemary and walnuts, then lightly drizzle with the rosemary passion fruit syrup.
  5. Place the second puff pastry sheet on top and gently press the layers together.
  6. Cut the pastry into long strips.
  7. Twist each strip, then roll it into a small nest shape and place it on the prepared baking sheet.
  8. Whisk the egg and water together and brush each nest with the egg wash.
  9. Bake at 400°F for 15 to 20 minutes, or until puffed and golden brown.
  10. Finish with another drizzle of rosemary passion fruit syrup and serve warm.
